Celebrate the last of the hot weather with a spirited, chunky gazpacho in the Mexican mode. Tomatoes give the soup their characteristic rich, rounded flavor, and tomatillos—an Aztec and Mayan staple—lend fruity tartness and great body.

1/2 gal. milk
4 tbsp. plain yogurt with live cultures

NOTE: Check the yogurt container to see if your starter yogurt contains live cultures- an absolute must in this recipe.

Eggplant "Meatballs"

Ingredients
2 (8 ounce) packages cream cheese, softened
1 (5 ounce) jar green olives, drained and chopped
3 tablespoons ketchup, or as needed

Directions
In a medium bowl, mix together the cream cheese and ketchup, adding ketchup as needed to make the mixture a light pink color. Stir in olives. Cover, and chill for at least one hour before serving.
