Cucumber Tomato Salad
Chef Lisa of Dinner Thyme Personal Chef Service and her newest endeavor, Orange Pomegranate will demonstrate how to make Cucumber Tomato Salad at the Co-op Farmers Market on Sunday, July 25th. (Recipe follows.)

Cucumber Tomato Salad with Vinaigrette
Serves 4
Ingredients:
SALAD:
1 cucumber, peeled and sliced thin
2 medium tomatoes, sliced and halved
1/2 onion, sliced
1/2 teaspoon kosher salt
VINAIGRETTE:
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon fresh oregano, coarsely chopped
Freshly ground black pepper, to taste
Directions:
Combine cucumber, tomato and onion in a colander. Season with 1/2 teaspoon kosher salt. Put colander in a bowl and let sit for 30 minutes. Discard excess water from bowl. Transfer vegetables to a serving bowl.
Whisk together olive oil, vinegar and oregano. Add black pepper. Pour vinaigrette over vegetables. Gently toss to coat. Taste for seasoning.
