Banana Muffins

Alas...in my never ending quest for ways to use up old bananas, I offer:

Banana Muffins

Beat together:

½ cup butter or margarine
½ cup maple sugar or dehydrated cane juice

Add and mix well:

2 tbsp. maple syrup
1 egg
1 tsp. baking soda, dissolved in 1 tbsp. hot water
1 cup mashed bananas

In a separate bowl or container, mix together:

1 ½ cups whole wheat pastry flour
¼ tsp. sea salt
1 tsp. cinnamon

Add dry to wet. Mix until just combined. Fill muffin tins with paper liners ¾ full.  It should make 10 muffins. Bake in preheated oven at 375° for 20 minutes.
